Refresh your barbecue menu with these healthier grill options:
INGREDIENTS
– 3/4 c. balsamic vinegar
– 1 tsp. garlic powder
– 2 tbsp. honey
– 2 tbsp. extra-virgin olive oil
– 2 tsp. Italian seasoning
– Kosher salt
– Freshly ground black pepper
– 4 boneless skinless chicken breasts
– 4 slices mozzarella
– 4 slices avocado
– 4 slices tomato
– 2 tbsp. Freshly sliced basil, for garnish
– Balsamic glaze, for drizzling
DIRECTIONS
– In a small bowl, whisk together balsamic vinegar, garlic powder, honey, oil, and Italian seasoning and season with salt and pepper. Pour over chicken and marinate 20 minutes.
– When ready to grill, heat grill to medium-high. Oil grates and grill chicken until charred and cooked through, 8 minutes per side.
– Top chicken with mozzarella, avocado, and tomato and cover grill to melt, 2 minutes.
– Garnish with basil and drizzle with balsamic glaze.

INGREDIENTS
– 4 (6-oz.) salmon fillets
– Kosher salt
– Freshly ground black pepper
– 4 tbsp. butter
– 1/2 c. lime juice
– 1/4 c. honey
– 2 garlic cloves, minced
– 2 tbsp. Chopped cilantro
DIRECTIONS
– Season salmon with salt and pepper. Heat grill and place salmon on grill flesh side down. Cook for 8 minutes then flip and cook on other side until salmon is cooked through, 6 minutes more. Let rest 5 minutes.
– Meanwhile make sauce: In a medium saucepan over medium heat, add butter, lime juice, honey, and garlic. Stir until butter is melted and all ingredients are combined. Turn off heat and add cilantro.
– Pour sauce over salmon and serve.

– 2 medium zucchini, sliced into thick strips
– 1 tbsp. extra-virgin olive oil
– 1/2 tsp. lemon zest
– 1/4 tsp. crushed red pepper flakes, plus more for garnish
– Kosher salt
– Freshly ground black pepper
– 4 basil leaves, torn into medium pieces
DIRECTIONS
– Preheat grill on medium-high. In a large bowl, toss zucchini with oil, lemon zest, and red pepper flakes. Season with salt and pepper.
– Once grill is hot, carefully use tongs to rub an oiled paper towel over grates.
– Using tongs, place zucchini on grill. Cover and cook, 3 minutes. Flip and continue cooking on high, covered, 2 to 3 minutes more.
– When zucchini is tender, remove from heat and garnish with basil and more red pepper flakes.
